Cardamom Brown Butter Blondies (Nordic Blondies)

Ingredients

120g (about 1 cup) all-purpose flour

1 tbsp. cardamom

0.5 tsp. baking powder

0.5 tsp. salt

0.75 cup (1.5 sticks) butter

1 cup light brown sugar, packed

1 egg + 1 yolk

1 tsp. vanilla extract or vanilla bean paste

 

Preparation

Place butter in a small saucepan over medium heat. Allow to melt and cook until solids have browned to a golden color. Remove from heat and set aside to cool slightly.

In a medium bowl, mix together flour, baking powder, cardamom, and salt. Set aside.

In another bowl, whisk brown sugar and eggs until light and frothy. This should take about 2-3 minutes. Once the egg-sugar mixture is fluffy and opaque, stir in browned butter and vanilla.

Fold in dry ingredients, one half at a time, until just combined. Spread evenly into a parchment lined 8x8 pan and bake at 350 F for 24-28 minutes or until the center is just done. Allow to cool completely in the pan.

Once cooled, remove blondies from the pan and slice into 12 bars. Cover in powdered sugar for serving, or enjoy on their own!
