Orange Chai Rolls with Cream Cheese Frosting

Ingredients

177ml (0.75 cup) warm milk

7g (2.25 tsp.) instant dried yeast

50g (0.25 cup) white sugar

1 egg + 1 yolk

4 tbsp. butter (0.5 stick), melted

420g (3.5 cups) all-purpose flour

1 tsp. salt

0.25 cup heavy cream, for baking

Spiced Filling

0.5 cup (1 stick) butter, softened

 0.75 cup brown sugar, packed

1.5 tbsp. chai spice

0.5 tsp. salt

Cream Cheese Frosting

8 oz. cream cheese, softened

4 tbsp. (0.5 stick) butter, softened

2 cups powdered sugar

1 tsp. vanilla extract

Zest from one orange

A pinch of salt

For Serving

Roasted pistachios (optional)

 

Preparation

For the dough: Whisk together warm milk, yeast, and sugar and allow to rest until foamy, about 10-15 minutes. Add to the bowl of a stand mixer and add egg + yolk, butter, flour, and salt and knead on medium speed until a smooth dough forms, about 7-8 minutes.

Shape dough into a ball and place it back into the stand mixer bowl with a little bit of oil to prevent sticking/drying. Cover and allow to rise at room temperature for 1 hour or until nearly doubled in size.

Roll dough into a rectangle shape about half an inch thick. Ina small bowl, whisk together brown sugar, chai spice, and salt. Spread softened butter on dough, then layer on the brown sugar mixture until evenly coated.

Starting at a long edge, tightly roll the dough on itself into a cylinder. Slice the cylinder in half, then each half into quarters, then divide each quarter by three. This should give you a total of 12 rolls.

Place rolls in a greased 9x13 inch pan in a three by four arrangement, leaving small gaps in between each. Cover with plastic wrap and allow to proof in the fridge overnight (or at least 8 hours). I promise, this step makes a huge difference in the amount of flavor that develops from an overnight cold proof!

About an hour before baking, remove rolls from the fridge and allow to come to room temperature. Right before baking, pour heavy cream between the rolls so that it sinks to the bottom without much getting on the tops.

Bake on 350 F for about 25-30 minutes or until the tops are golden.

For the frosting: In a medium bowl, combine cream cheese, butter, powdered sugar, vanilla, orange zest, and salt. Whisk together by hand or with a mixer until combined and fluffy.

Serve rolls warm with a dollop of frosting, and enjoy!
