Matcha Muffins with Vanilla Bean Glaze

Ingredients

240g (about 2 cups) all-purpose flour

2 tbsp. matcha

1 tbsp. baking powder

0.5 tsp. baking soda

0.5 tsp. salt

150g (0.75 cup) white sugar

0.5 cup (1 stick) butter, melted

2 eggs

1 tsp. vanilla extract or vanilla bean paste

Spiced Crumble

1 cup all-purpose flour

0.25 cup light brown sugar

0.25 cup white sugar

2 tsp. Cardigan | Pumpkin Pie Spice

6 tbsp. butter, melted

Vanilla Bean Glaze

1.75 cups powdered sugar

2 tbsp. butter, melted

2 tbsp. whole milk

1 vanilla bean, split and deserved

 

Preparation

For spiced crumble: Mix flour, sugars, pumpkin pie spice, and salt. The texture should be crumbly, like wet sand. Set aside.

For muffins: In a medium bowl, whisk together flour, matcha, baking powder/soda, and salt. Set aside.

In a larger bowl, mix sugar, melted butter, eggs, and vanilla. Fold in half the dry mixture, then the rest until fully combined.

Preheat oven to 350 F and line a muffin tray with liner papers. Divide dough between the cups and top with spiced crumble. Bake for 18-22 minutes or until the center is just done. Remove muffins from the tray and allow to cool completely.

For vanilla bean glaze: Split one vanilla bean in half and remove the seeds. Whisk together powdered sugar, vanilla bean seeds, milk, and melted butter.

Pour glaze directly over cooled muffins and allow to set, about 30 minutes. Serve warm with extra glaze, or with softened butter on the side. Enjoy!
