Black Sesame Banana Muffins with Cream Cheese Frosting

Ingredients

220g (1.75 cups) all-purpose flour

1 tsp. baking powder

0.5 tsp. baking soda

1 tsp. Cardigan | Pumpkin Pie Spice

A pinch of salt

3 large, very ripe bananas

0.5 cup white sugar

0.25 cup light brown sugar

0.5 cup neutral oil, like avocado

2 tbsp. black sesame paste

2 large eggs

1 tsp. vanilla extract

Cream Cheese Frosting

8 oz. (1 block) cream cheese

6 tbsp. unsalted butter, softened

1 cup powdered sugar

2-3 tbsp. whole milk, as needed

A pinch of salt

1 tsp. vanilla extract

 

Preparation

For the muffins: Preheat the oven to 350 F. In a medium bowl, whisk together flour, baking powder and soda, pumpkin pie spice, and salt. Set aside.

In a larger bowl, mash bananas with a fork until smooth with a few visible pieces of banana remaining. Mix in white and brown sugars, oil, sesame paste, eggs, and vanilla and stir until combined.

Fold in dry ingredients, mixing until just incorporated and no lumps remain. Portion evenly into a lined muffin pan and bake for 18-22 minutes or until a tester comes out clean.

For the frosting:  In a medium bowl, whip together cream cheese, softened butter, powdered sugar, vanilla, and salt. If the mixture is too thick, add in milk one tablespoon at a time until the desired consistency is reached.

When ready to serve, spread the frosting over each muffin in an even layer. Enjoy!
